Spinach casserole recipe
Have a casserole dish lined at the bottom with fried onion bits found in the grocery store where the can vegtables are sold.
Next cook up your spinach which is hopefully baby spinach and place the cooked spinach on top of the fried onion bits.
Next place on top of the spinach some cheese like American Cheddar slice. A couple of pieces. I also used some Amish cheese which could be another kind of cheese.
Next drain the juice out of a can of mushrooms and add on top of the cheese.
Next add one can of cream of mushroom soup.
Next top with rest of fried onion bits from the can.
Cover top with lid or aluminum foil and bake in the oven on 350 degrees for about 20 minutes and enjoy the casserole. The onion bits should brown on top. Plus there should be a little bit of bubbling due to the cream of mushroom soup. Try it and see if you like it.

The recipe sounds like a variation on green bean casserole which is very tasty. It is a favorite covered dish for parties and it always seems to disappear at these parties. You might try it at the next time you have to bring something to a party. Mentioning the cheese reminded me of a fancy restaurant that my brother and his wife took me to many years ago. We got a very thick soup called Welsh rarebit. It was served in one of these crock style bowls. In the very thick soup was a big lump of solid but soft cheese. Although it sounds terrible, it was actually quite good. Of course, I didn't worry about cholesterol back then. Mary and I went to see State of Play yesterday. The movie was very slow moving which made it boring and difficult to stay awake. But the popcorn was good and Mary had gotten a coupon via email for a free bag of popcorn so it was free. But we had to pay for the soda though. Mary belongs to the AMC movie watchers club and they send her coupons for free things from time to time. It is a pretty good deal. The Walgreens here in Ocoee is offering free green Eco bags if you buy anything plus a 15% discount. We may stop by and buy something and get our free bag. But most of the day will be spent at home. Cooking, or should I say baking. Each year my mother would bake a yellow cake with milk chocolate icing which was my favorite. My brother liked something called a chocolate mayonaise cake with white frosting which she made for him on his birthday each year. It was a dark chocolate and I found it to be a little bitter. But I did like the white icing. And yes, I had those little hard candies that spelled out Happy Birthday which had to be soaked off from the paper that they were stuck to. Try as hard as I could, I was never able to eat those hard sugar candy letters. One year on the day before my birthday when I was pretty young my mother told me that she wasn't going to bake me a birthday cake for me. Of course she was only kidding but I didn't realize it. I was determined to have a birthday cake even if I had to bake it myself. I found a box of yellow cake mix and whipped up the batter. I used one of those hand cranked egg beaters. I greased the two cake pans as I had seen my mother do. pured the cake batter in, and put them in the oven. But the oven knob was confusing what with all of those temperature numbers on them. I had no idea what to set it on. Then it became obvious. There was a setting with the letter B on the knob which had to mean "Bake". So I set the knob on the letter B (actually meant broil) and started baking my cake. I checked it fairly frequently because I didn't know how long to bake it for. The cake became a real nice golden color so it was done. I took it out of the oven and let it cool. As I was removing the cake from the cake pan it broke and this liquid batter ran out of the middle of the cake. It had not cooked inside. Then I realized that B stood for broil and that the cake had baked too quick because the oven just stayed "on". I was upset and when my mother got home I was literally in tears telling what had happened and that now I wasn't going to have a birthday cake on my birthday. She laughed and told me that she had only been kidding and assured me that I was going to have a birthday cake on my birthday. Those assurances ended the tears and my mom did make me a nice birthday cake but she never teased me again about not having a birthday cake on my birthday. I always had really nice birthdays with cake and ice cream and always lots of toys. I definitely had a good childhood except for the time when I thought that I wasn't going to have a birthday cake.
